Grown by women in Huila

Colombian coffee from the Mujeres Cafeteras collective in Huila, roasted in Malmö after you order it. Blackberry, sweet caramel, vanilla and cherry. Washed, and grown between 1,200 and 2,000 metres.

We buy one region and know it properly. This lot comes from a collective of women growers across Huila: Caturra, Castillo and Colombian Premium, washed and dried at origin. It cups at 84+ SCA. That is a floor we are confident stating, not a number we have rounded up.

Roasted to order, shipped within 48 hours

Nothing sits on a shelf here. We roast after your order comes in and post it within 48 hours, and the bag carries the date it was roasted, not a best-before two years out. Coffee is at its best in the weeks after roasting, and the only way to sell it that way is to roast it when it is wanted.

Five profiles, one coffee

The same beans taste substantially different depending on how far we take the roast. Lighter roasts bring out the fruit and the acidity; darker roasts develop the chocolate and the body. Pick the one that suits how you actually drink it.

Brewing

Water makes a real difference. Use soft water, ideally below 150 ppm total dissolved solids. Let the coffee rest for at least ten days after roasting: the sharper, astringent notes mellow and its true character comes through. It suits every brew method, from immersion and percolation to espresso.

How we roast it

Every roast on our Aillio Bullet R1 is logged, from the moment the beans go in to the moment we drop them. Here is the log behind each profile.
